Thick And Chewy Gingerbread Cookies

3 cups unbleached all purpose flour
¾ cup packed dark brown sugar
¾ teaspoon baking soda
1 tablespoon ground cinnamon
1 tablespoon ground ginger
1 teaspoon ground cloves
1½ sticks unsalted butter, softened but still cool, cut into 12 pieces
¾ cup light or dark molasses
2 tablespoons milk
Preheat oven to 350 degrees.
