At the Spot, a new food hall in the suburbs of Washington, D.C., Hong Kong-style bubble waffles are a foodie draw. In Washington, Union Market, opened in 2012, has a stall serving South Indian dosas. Exotic and artisanal foods are driving food halls' popularity. There were 25 in 2010; an estimated 300 will be open by 2020.
