FARGO, N.D. (AP) - This city's record of the biggest pancake feed is facing a challenge from Texas.

A record 34,818 pancakes came off grills Feb. 9 at the Fargo Civic Center during the Kiwanis Club's Pancake Karnival fundraiser, Kiwanis officials announced.

The flapjack feed surpassed the previous mark of 30,724, set by the Lubbock Lions Club in 2002.

Lisa Ellison, spokeswoman for the convention and visitors' bureau in Lubbock and a Lions Club member, said a little friendly competition goes a long way.

"We'll know to work a little harder and maybe get a few extra tubs of pancake batter," Ellison said. "It's a good challenge."

Lubbock holds its own pancake festival and, until a few days ago, also laid claim to the world record. Their 56th annual pancake festival is slated for Feb. 23.

"It's the only pancake festival in the region," Ellison said. "It's the one thing everyone looks forward to when it comes to pancakes."

The Texas group is equipped for the festival with 4,620 pounds of pancake batter, 1,012 pounds of margarine, 3,400 pounds of link sausage and 2,250 pounds of maple-flavored pancake syrup.

A records manager with Guinness World Records in London certified the Fargo mark earlier this month. Kris Teufel met with grillers to discuss the required size and supply them with a pancake template, then tracked the number of flapjacks, along with four other counters.

Arday Ardayfio, an organizer at Fargo's Pancake Karnival, said the Kiwanis club is already thinking about next year's flapjack feed.

"We started a war - a pancake war," Ardayfio said.
